Farmer’s Blend Burger With Hickory Smoked Garlic Aioli
For this recipe, you’ll need about a pound of ground grass-fed beef. The burger patties themselves can be formed in advance, frozen and stored for a while, and thawed at your convenience. When you’re ready, remove them from the freezer and give them a night in the refrigerator before cooking. Just before you put them on the grill, let them rest at room temperature for 30 minutes, patting dry with a towel to remove any water. 

On the grill, create a section for direct heat and a section for indirect heat. Clean the grates and grease with grapeseed oil. Give each pattie a thumb indentation in the center to prevent curling, then sear the burger in the direct heat section for approximately three minutes on each side. Place them on the indirect heat side for about three minutes of additional cooking. 

Make the aioli with one cup of organic mayonnaise and two teaspoons of hickory-smoked garlic salt. After your burger has rested in a foil tent for about 10 minutes, serve with a brioche bun, the aioli, arugula and slices of red onion.
