We’ve previously shared some cooking tips on various cuts of grass-fed beef. Our blog has featured various holiday recipes perfect for summer cookouts or Thanksgiving family dinners. Today we’re bringing you some simple, nutritious meals featuring grass-fed beef that bring lots of flavor to weeknight dinners and everyday meals. The Ultimate Beef Shawarma Burger on Toasted Naan This burger is perfect for a weeknight and is sure to satisfy even picky eaters! Mix your favorite spice blend (or this one) with grass-fed ground beef (about 1 lb of beef to 1 tbsp of spice mixture) and let rest (for at least 10 minutes, but overnight works too and can help with prep time the next day). Form into patties and grill or cook in a cast-iron skillet until done, being careful not to overcook the grass-fed beef.
Top with warm naan, or your favorite bun, and all the toppings. For this burger, we recommend your favorite yogurt feta sauce, which can be made by combining 1/2 cup each of Greek yogurt and feta cheese, along with 1 tsp lemon juice, 1/2 tsp dried mint, and 1/4 tsp each of sea salt and black pepper. Finish it off with diced cucumbers, tomatoes, pickles, fresh parsley, onions, and any of your other favorite toppings. We think these also would be perfect for a picnic!
Healthy Wild Mushroom and Grass-fed Beef Oven-Baked Meatballs These are easy to meal prep ahead of time and perfect for sandwiches, soups or on top of pasta! In a pan, saute 1 lb of wild mushrooms, adding a pinch of salt, thyme and rosemary for flavor for an additional minute after they’re tender. In a bowl, combine 1 lb grass-fed ground beef, 2 eggs (or a substitute), 2 tbsp each of tomato paste and worcestershire sauce, 3/4 cup panko breadcrumbs (or a substitute), 1/4 cup chopped parsley, salt and pepper and the sauteed mushrooms. Mix and roll into golf ball size and bake on a sheet pan for 15 minutes at 350 degrees.
