Loaded Beef Nachos with Homemade Pico de Gallo
Use a large skillet to heat some olive oil over medium-high heat, cooking in half a diced yellow onion. Once it starts to soften, add your delicious Dark Hammock Legacy Ranch ground beef, cooking until browned. Add half a teaspoon each of chili powder, paprika, cumin, salt, and pepper, and a dash of crushed red pepper, stirring to combine. Mix in your choice of a can of pinto or black beans and half a cup of hot water. Reduce the heat to low and simmer. It’s time for pico de gallo!

You can use store-bought, well-drained pico de gallo, or make your own with the other half of that yellow onion, 6 diced Roma tomatoes, a diced jalapeno, some chopped cilantro leaves, the juice from one lime, and 1/2 teaspoon salt. Stir together. 

Build those nachos by placing a layer of tortilla chips on an oven-friendly platter or plate, followed by a layer of the beef and bean mixture. Sprinkle with 1 ¼ cups of the shredded Mexican-Blend cheese. Repeat until you’re done, or about 3 layers’ worth. 

Heat the plate in a 350 degree oven for 10 minutes to make that into a melted pile of goodness. Remove and sprinkle with diced avocado and plenty of that homemade pico de gallo. And save some for us!
