Stuffed Peppers – These are an easy, healthy meal that will feel like a treat, and they’re freezer friendly! Start by coating the bottom of your slow cooker with some olive oil. In a large bowl, mix together one pound of ground grass-fed beef, one onion (peeled and diced), one minced clove of garlic, and two tablespoons of your favorite pasta sauce. Cut the tops off four bell peppers and clean them out, then stuff with the meat mixture. Place in your slow cooker, cover with the rest of the jar of pasta sauce and ½ cup of water, and cook on low for six to eight hours.

Banana Pepper Shredded Beef – This is perfect for a weeknight dinner or a picnic on the ranch. Combine two pounds of boneless beef chuck shoulder roast (with the fat trimmed), four sliced and seedless banana peppers, one peeled and sliced yellow onion, and 1-1.25 cups of beef broth in the slow cooker. Set it to low for six to eight hours. After cooking, shred with a fork. 

Sweet & Sour BBQ Meatballs – Got some meatballs sitting in your freezer? This recipe is perfect for you. To the slow cooker, add one to two pounds of meatballs, one chunked sweet onion, one chunked green pepper, one chunked red, yellow or orange pepper, one chunked pineapple, and an 18oz bottle of your favorite BBQ sauce. Cook on low until peppers are tender.
